It is about a parody of liturgical Dies Irae, whose origin would go back up to the 15th century in the country of Beaune and of which there are numerous variants in the French regions always with having seen the wolf at the head of a list of other animals and having seen the animals do things with human characteristics: drink, sing and dance. This Italian saltarello is in the Tuscan manuscript Add MS 29987, dating from the late 14th or early 15th century and now in the British Library. The saltarello was a lively, merry dance. The music survives, but no early instructions for the actual dance are known. It was played in a fast triple meter and is named for its peculiar leaping step, after the Italian verb saltare (to jump).
